During the spring of 2021 India was experiencing the world’s worst outbreak of COVID-19 as a second wave of the virus swept through the country. My sister and her partner decided to create and sell a baked goods box to benefit COVID relief in India. The pastries were inspired by flavor profiles common in Indian cuisine.
